docker run --rm -d -p 1025:1025 -p 8025:8025 ghcr.io/cloudogu/mailhog

You can send mails via SMTP to localhost:1025 and see mailhogs web UI via localhost:8025

To get a fresh image on the latest alpine version, just create a new release with a new tag, that increases build version by one, e.g.

Latest: 1.0.1-42
New tag: 1.0.1-43
